Sweet potato boat ingredients: - 2 medium size sweet potatoes - 1+1/2 cup great northern beans (or any white beans of your choice) - 1/2 tomato, chopped - 2 tablespoons fresh chopped cilantro - 1/2 to 1 avocado Sauce: - 1+1/2 tablespoon nutritional yeast - 1 tablespoon tahini - The juice of 1/2 lemon - 1/2 teaspoon curry powder - Salt to taste Tofu scrambled: - 1 bloc of firm tofu (14 oz) - 1 cup chopped mushrooms - 1/2 onion, chopped Salad: Any greens and veggies of your choice. Salad dressing: 1 teaspoon mustard, 1 tablespoon of balsamic vinegar, 1 to 2 tablespoons of olive oil Asparagus salad: - 4 Large lettuce leaves - 1 cup cooked quinoa - 1 cup chickpeas - Asparagus - 1/2 avocado - 2 tablespoons sunflower seeds Salad dressing: 1+1/2 tablespoon tahini, juice of 1/2 lemon, 2 tablespoons coconut aminos, 1 teaspoon curry powder, salt to taste ----------------------------------------------------------------------------------------------- Hey there!
